Harvest method: Picked by hand and selection in vibratory table.
Maceration time: Three days in cold, then ten days of fermentation and twenty days of maceration.
Alcoholic fermentation: In stainless steel tanks with selected yeasts.
Malolactic fermentation: Induced with lactic bacteria in oak casks.
Ageing: 18 and 20 months in French oak barrels .
